No Skimping On Taste: Westport's NewBrook Kitchen Is A Paleo Pleaser

WESTPORT, Conn. -- An autoimmune disease diagnosed three ago led Cindy and Danielle Hartog to a Paleo diet.

And now, thanks to their background -- the mother/daughter duo are French classically trained chefs -- there's now a new place in town for folks to find healthy eats.

NewBrook Kitchen + Artisan Market in Westport aims to serve customers gourmet Paleo dishes in a casual and modern setting using the finest quality ingredients that are free from gluten, milk, and soy.

On the menu: Innovative salads -- think berry salmon salad (mixed greens with fresh blueberries, sliced strawberries, cucumber, and avocado with an orange vinaigrette topped with grilled salmon), sandwiches (i.e. a roasted grape and tuna Paleo bagel filled with tuna made with Paleo aioli, roasted red grapes, and pine nuts, finished with arugula) and decadent cookies including the Double Shot, an espresso cookie topped with a dark chocolate espresso truffle.

Cindy is the baker; Danielle the head chef (and 2013 Staples grad).

The ideas behind the eatery -- and each dish --  came from the women's frustration to find a chic and warm environment where the food was creative and exciting and also Paleo.

They also wanted to highlight products they like. Hence, their artisan market which features products sourced from local craftsman, including handmade jewelry, soaps, and some of their fav Paleo items.

In addition to the wares, customers will find 10 seats for eating in, including a cozy den area where the Hartog's encourage folks to hang out.

NewBrook Kitchen opened Tuesday, June 6 and already, the women are taken back by the response. 

Said Cindy: "We've been thrilled to meet all the people who have come from near and far to finally get food in a place where they can feel free to order without fear of getting sick."
